Loaded Ketchup Wedges with Quorn & Cheese

Ingredients
60 g Vegetable oil
1 kg Aviko Jacket Wedges
400 g Diced Quorn
100 g Green peppers, de-seeded and finely diced
100 g Red peppers, de-seeded and finely diced
200 g Chopped tomatoes (tinned)
60 g Tomato ketchup
200 g Reduced fat mild Cheddar cheese (grated)
Preparation
- Pre-heat oven to gasmark 5 /200◦c
- Heat oil in a roasting tin until it is hot and the Jacket Wedges
to fully coat with the oil
- Place Jacket Wedges into the oven and roast for approx 40
minutes until they are crispy
- Add the peppers and Quorn to the Jacket Wedges in the roasting
tray for the last 8-10 minutes of their cook time
- Prepare chopped tomatoes and grated cheese
- Remove Jacket Wedges, Quorn and peppers from the oven,
transfer into a clean serving dish
- Drizzle with tomato ketchup across the Jacket Wedges and
sprinkle the grated cheese across the Jacket Wedges, giving an even
coverage
- Return Jacket Wedges to the oven and allow the cheese to
melt
- Remove from the oven and serve

Serve loaded Jacket Wedges with a simple tomato, carrot &
cucumber stick salad
