Roasted Tomato Potatoes
Ideal accompaniment for many dishes, but particular favourite
for the kids.

Ingredients
100 ml Vegetable oil
1.5K g Aviko Steam & Fresh
Baby Skin On Potatoes
200 g Onion
800 g Chopped tomatoes (tinned)
50 g Tomato puree
10 g Chives, chopped
Preparation
- Heat 70 ml oil in a roasting tin. Add potatoes to the hot oil
and seal on all sides
- Place the potatoes in the oven and roast for approx 40 minutes
on gas mark 6 / 200◦c
- Heat 30 ml of oil in a saucepan until it is hot, add the onions
and cook until they are lightly coloured and soft
- Add tomato puree to the onions and stir in
- Add chopped tomatoes to the onions and cook out for
approx 5-10 minutes
- Remove roasted potatoes from the oven & transfer into a
clean serving dish. Pour tomato sauce over the potatoes and
sprinkle with chives
Tip
Serve tomato potatoes with fish fingers, cod portions or chicken
& garden peas
