Frying tips

Tip 1. Store frozen fries below -18°C and chilled fries at 0-4°C. Note: fries have a limited shelf-life once they’ve been removed from cold storage, even if they are returned to the refrigerator or freezer again.

Tip 2. Deep-fry all Aviko fries at 170°C. This ensures that the fries develop a nice, crispy bite and an attractive golden colour.

Tip 3. Deep-fry frozen fries for 3-4 minutes and chilled fries for 2-3 minutes. For optimum results, fill the fryer basket no more than half-full. Shake the basket frequently during frying.

Tip 4. After frying, don’t leave the basket of fries above the hot oil. This will cause the fries to lose some of their crispiness.

Tip 5. Remove any crumbs from the oil and filter it daily. The cleaner the cooking oil, the better the end result will be.

Tip 6. Never fry any other products in cooking oil that is meant for fries. This will ensure an optimum result as well as the best-tasting fries.

Tip 7. Use a non-hydrogenated vegetable oil. This contains no trans fats, making it more healthy.

Tip 8. Always use high-quality cooking oil. In other words, the oil should be clear and transparent, light in colour and should not foam. When changing the oil, replace it all in one go to help it stay fresh for longer.

Tip 9. Turn down the heat on the fryer if you will not be frying for a while. This will help to prolong the oil’s freshness. Check the thermostat regularly to make sure it displays the temperature correctly, otherwise the fries might not be cooking properly.

Tip 10. Only deep-fry the fries once. Frying the fries a second time will negatively affect their taste, as well as causing them to absorb too much oil.

When serving fries to take away, make a few small holes in the packaging to allow the steam to escape. This will help the fries to stay nice and crispy.
