Brunch Frittata Recipe
This delicious brunch or breakfast omelette would work great sold whole or in pizza slice style portions.
Ingredients
- Aviko Hash Brown Bites
- 6 eggs
- 250g chestnut mushrooms
- 200g bacon lardons
- 100g cherry tomatoes
- Rocket leaves to serve
Method
- Halve cherry tomatoes and roast alongside Aviko Hash Brown
Bites as per pack instructions.
- Fry bacon lardons and quartered mushrooms until browned and
crisp.
- Whisk eggs, season with pepper and add cooked bacon and
mushrooms to mixture.
- Add a little olive oil to a frying pan on medium head then pour
egg mix in to pan.
- Cook for 3-4 minutes until frittata begins to form then top
with Aviko Hash Brown Bites and cherry tomatoes.
- Finish frittata under grill for 1-2 minutes.
- Garnish with rocket leaves and serve.
