Huevos Rancheros
Looking for something a bit different to add to your brunch or breakfast menu? This Huevos Rancheros recipe is great, especially served with Aviko Hash Browns to add that extra twist. What's even better is that you can batch make the sauce so it's really easy to prepare and serve.
Ingredients
- Aviko Hash Browns
- Small white onion
- 2 Red chillies
- 2 Green chillies
- Tsp Smoked paprika
- 3 or 4 cloves garlic
- 2 400g cans chopped tomatoes
- Avocado
- 4 eggs
- Coriander
Huevos Rancheros style eggs with Aviko Hash Browns
Method
- Finely slice white onion and fry until translucent
- Finely chop and deseed red chillies, crush garlic and add to
pan along with smoked paprika
- Once combined add 2 cans of chopped tomatoes and simmer for
around 15-20 mins
- Form small wells for eggs and add to pan then cover for around
5 minutes until eggs set
- Cook Aviko Hash Browns as per packet instructions
- Serve pan garnished with avocado slices, sliced green chilli
and coriander leaves and alongside hash browns
