Huevos Rotos

Huevos Rotos with Patatas Bravas

Give brunch a Spanish twist with this simple but effective dish of Aviko Patatas Bravas, baked eggs and serrano ham finished with a pinch of paprika, rocket and lemon.

Ingredients 

150g Aviko Patatas Bravas

2 Eggs

75g Serrano ham

25g Rocket leaves

 

To Serve 

Pinch of Paprika

Pinch of Chilli flakes

Lemon wedges

 

Method

  • Cook Aviko Patatas Bravas as per packet
  • Place Aviko Patatas Bravas in an oven proof dish then scatter with serrano ham and crack eggs on top
  • Oven bake dish for 5-10 minutes or until eggs are cooked
  • Remove from oven and top with rocket leaves
  • Break the egg yolks then season with salt, paprika and chilli flakes
