Shakshuka with Hash Browns
Serve up a brunch with a difference. This middle eastern dish is simple to prepare, healthy, vegetarian and your customers will love it.
Ingredients
3 Hash Brown Triangles
400g Chopped Tomatoes
2 Eggs
2 Cloves Garlic
Tbsp Olive Oil
Tbsp Smoked Paprika
Handful Chopped Parsley
Method
Cook Hash Browns as per packet instructions
Slice garlic and fry in olive oil for a minute or until lightly golden
Add smoked paprika and chopped tomatoes to pan and simmer for 10 minutes
Make 2 small pools in tomato mixture and crack eggs into them
Cover pan and steam until eggs are soft boiled with runny yolks
Garnish dish with parsley and serve alongside Hash Browns
