Steak Bearnaise Loaded Fries

Steak Loaded Fries with Truffle Bearnaise

Charred steak slathered in truffle-infused Bearnaise sauce and finished with shaved truffle and chopped chives.


150g SuperCrunch Pure & Rustic Chips

150g Sirloin, bavette or flat iron steak 


Truffle Bearnaise

50ml Dry white wine

50ml White wine vinegar

1 Shallot

15g Tarragon leaves

1 Shallot

2 Egg yolks

3 tbsp Water

Pinch of salt

3 tbsp Butter, at room temperature

1 tsp Minced black truffle


To finish

Chopped chives

10g Black truffle shavings



  • Add the wine, vinegar, shallot and half the tarragon to a pan and simmer for 5-10 minutes until reduced to around a third
  • Separate liquid from other ingredients and allow to cool, meanwhile melt the butter
  • Blend together the yolks with the vinegar liquid until fully combined and then slowly add the melted butter to form a sauce
  • Finish the sauce with the rest of the tarragon and black truffle
  • Season steak and pan fry until medium rare or as required
  • Cook Aviko SuperCrunch Pure & Rustic Chips as per packet instructions
  • To serve lay the steak over the fries then top with the sauce, chives and truffle shavings
