8 Aviko Straight Churros
500g Fresh seasonal fruit, eg strawberries, blueberries, raspberries, pineapple, kiwis, pears
- 1 serving of mango-lime puree*
- 1 serving of strawberry-raspberry puree*
- 1 serving of lemon-lime dip*
50g Chopped nuts
25g Grated white chocolate
2 tsps Toasted coconut flakes
Quick Mango Lime Puree (Serves 4)
Finely puree 600g canned mango with a stand mixer or hand blender. Add zest and juice of 2 limes. Store in the refrigerator.
Strawberry and raspberry puree (serves 4)
Simmer 500 g strawberry and/or raspberry pieces with 75 g sugar and the juice of one lemon for about 5 minutes over low heat until soft. Pass the mixture through a sieve and leave to cool completely. Store in the refrigerator.
Lemon Lime Dip (serves 4)
Dilute 400 g lemon curd (lemon egg cream) with the juice of 2 limes and 2-3 tablespoons of water. Store in the refrigerator.
- Cook Churros as per packet instruction.
- Arrange ingredients, toppings and dips on platter and serve.
